Rome’s Sweet Potato Cornbread Muffins

Did you know that there are over 6000 types of sweet potatoes worldwide? Well, it’s true. Here in the US, growers can select from more than 100 different types. My wife enjoys the more common orange sweet potato. Even though the purple sweet potato is considered the healthiest, they are all very tasty and very healthy for consumption. As a chef, I love the flexibility of all the many things that I can create with sweet potatoes. For example, sweet potato pie. That is a very popular one, but I also love sweet potato ice cream, sweet potato cheesecake, or sweet potato cornbread or corn muffins. My wife loves my sweet potato cornbread recipe. Even though she claims that I use way too much butter, I’ve never seen her push back from the table. I'm just saying!!!
Ingredients
2 Large sweet potatoes, peeled and sliced into 1-inch pieces
½ Cup of sugar
½ Cup of brown sugar
1 Stick of unsalted butter
2 Teaspoons of ground nutmeg
1 Tablespoon of vanilla extract
¼ Cup of orange juice (with or without pulp)
2 Cup of yellow corn meal
2 Cup of cake flour
8 Teaspoons of baking powder
½ Teaspoon of salt
3 Eggs
¾ Cup of milk
4 Tablespoons of oil
½ Cup of honey
1 Stick of melted butter
Directions
Preheat oven to 400°F. Place a 5-quart sauce pot on the stove over medium high. Place the potatoes into the pot. Add the sugars, butter, nutmeg, extract, and orange juice. Cover with a tight-fitting lid. Cook until the potatoes are fork tender, about 25 minutes.
Remove the lid and whip the potatoes until smooth. Set aside. Do not cover.
In a medium to large bowl, combine the corn meal, flour, baking powder, salt, eggs, milk, and oil. Mix well but do not overmix. Add the sweet potatoes to the mix and blend well.
Spray the muffin pans with non-stick spray, or use liners. Fill each cup with batter about three quarters full.
Place the muffins into the oven and bake for about 20-25 minutes. Test the muffins with a toothpick.
Brush the muffins with honey and melted butter and enjoy.
