Good BBQ and great sauces are wonderful staples of both Carolinas. While eastern North Carolina is known for its vinegar based sauce, South Carolina Is known for its mustard based sauce. I love the taste of them both. Back in 2016, I had the wonderful opportunity to experience and compete in the largest food sport in the world, better known as the World Food Championship. With so many categories of food along with the top 1,000 chefs in the world gearing up to battle it out to see which teams would end up in the top 10, I made my way through the stalls and discovered the wonderful South Carolina approach to BBQ. I was told by a kind gentleman that “the only way to have good BBQ is to have good patience. You’ve got to go slow and low. You can’t rush it. And another thing, the sauce is key. I don’t know what the hell they do everywhere else, but down in South Carolina, we do it right. It’s the mustard base that reigns supreme”.
Ingredients
1 Cup of white vinegar
½ Cup of sugar
½ Cup of lite brown sugar
1 Teaspoon of crushed red pepper flakes
1 Cup of honey
2 Cups of yellow mustard
2 Teaspoons of dry mustard
1/3 Cup of hot sauce
2 Tablespoons of Worcestershire sauce
Directions
Place a small saucepan on the stove over medium heat. Add the vinegar, sugars, and honey. Stir well. Continue to cook and stir until the sugars are dissolved.
Add the remaining ingredients and mix well. Continue to cook for about 20 minutes. Taste and adjust flavors to your preference.
